This is one of my favorite breakfasts. I make it every week.
Low-Carb Sausage Gravy
Rich, classic sausage gravy. Only 2 carbs and perfect over my 99 second low-carb bread.

Equipment
- 1 Skillet I use stainless steel. Cast iron works well too.
- 1 Spatula I use a wooden spatula
- 1 Measuring Cup 1 cup or larger
Ingredients
- 1 lb Pork Breakfast Sausage Make sure there's no added sugar
- 1 1/4 cups Heavy Cream
- 2 1/2 oz Cream Cheese Softened (Optionally cubed)
- 1 tsp Salt General guide - salt to taste
- 1/2 tsp Pepper Use 1/2 the amount you used of salt. Fresh Cracked is black pepper is best.
- 1 pinch Sage Optional
- 1 pinch Onion Powder Optional
Instructions
- Brown the sausage in a skillet over medium heat, breaking it into crumbles.
- If sausage is not already seasoned, add salt and pepper to taste.
- Remove the sausage temporarily, but do not drain the fat from the pan.
- Reduce heat to medium-low. Add heavy cream and stir to combine.
- Add 1 cup cream cheese in chunks and stir until fully melted and smooth. You can cut into chunks, or just rip the cream cheese into large pieces.
- Season with black pepper and salt. Adjust to taste.
- Add the sausage back to the skillet and simmer until warm.
- Add some or all of the last 1/4 cup of heavy cream to get the gravy to the texture you like.
